The eighth winner of the cooking show “Mastershef” Ivan Milanovic has pleased fans a new recipe on Instagram. This time, he told me how to make strudel with quince, Camembert and almonds.

For the dough:

  • Wheat flour – 180 gr
  • Vegetable oil – 30 g
  • Water – 100 g
  • Salt – 3 g
  • Lemon juice – 10 gr

For rolling dough:

  • Flour – 30 g
  • Corn starch – 15 g⠀

For the filling:

  • Quince – 700 g
  • Almonds – 100 gr
  • Sugar – 60 g
  • Corn starch – 15 g
  • Camembert – 150 gr.

Step-by-step recipe:

  1. Sift the flour. In the water dissolve the salt and lemon juice. Add the resulting liquid to the flour together with vegetable oil and knead the dough. Wrap with cling film and leave to rest for 20-30 minutes.
  2. For rolling dough, mix the flour with starch. Divide the dough into 8-10 balls. Podsypaya flour mixture roll each ball to a translucent state, as in the photo.⠀
  3. Fold the rolled out sheet of dough on top of each other, starting with a mixture of flour and starch.
  4. For the filling, chop the quince into small cubes. On a small amount of vegetable oil simmered quince. After 5-7 minutes, enter all the sugar for the filling, a spoonful of starch and caramelicious quince. Let cool before further work.
  5. Chop almonds and toast them in the oven.
  6. Before you put the filling, sprinkle the top sheet of dough with starch. Then spread the cooled quince, slices of Camembert and almonds. Form a tight roll and seal the edges.
  7. Top make shallow cuts and RUB the top of the strudel with egg yolk.
  8. Bake at 190 degrees for 40-45 minutes.
  9. The finished strudel sprinkle with powdered sugar. Definitely a little cool pie before cutting, otherwise the cheese will leak out.
