French doctors have discovered a link between the additives contained in processed meat and colon cancer. This is reported by the French Agency for Food, Environment, Occupational Health and Safety (ANSES). It is clarified that nitrates and nitrites in processed meat products, such as sausages, increase the risk of colon cancer. They are used to preserve food and to give it a pink color. “The greater their exposure, the higher the risk of colon cancer,” the message said.
